How To Make Turkish Coffee Part IV: Finesse

Finesse plays a large part in the brewing of Turkish Coffee. It’s as much an art as it is a culinary science. The 4th step in the process is about guiding the brew through the delicate final brewing stage.

Once the coffee has foamed nearly to the top of the ibrik’s neck, carefully stir it until the foam subsides, then place the ibrik back on the heat source. The coffee should start to foam again, this time more quickly. Remove from the heat source again, stir down the foam and put the ibrik back on heat. Repeat this process 3rd time, or a 4th if so desired (5 would be overkill). You do not stir the last time the foam rises, however. By this time you’ve finished making Turkish Coffee and can enjoy the unique pleasure of drinking it.
