Apple Pecan Coffee Cake2 c. sugar
1 c. vegetable oil
2 eggs
2 1/2 c. flour
1 tsp. salt
2 Tbsp. baking powder
1 tsp. baking soda
1 tsp. vanilla extract or flavoring
2 c. chopped pecans
2 c. chopped Granny Smith apples Grease and flour a 9 x 13-in. pan. Combine sugar and oil. Add well beaten eggs. Sift dry ingredients and add all at one time. Stir in vanilla extract or flavoring, pecans and apples. Pour into greased pan. Bake at 350 degrees F for 25 to 30 mins..
