Mexican Jack Omelet3 eggs
2 oz. Monterey jack/pepper jack cheese
1 Tbsp. water or milk
Salt and pepper to taste Place all ingredients in blender. Process on GRATE for about 10 seconds. Over med. heat, melt a sm. pat of butter in a skillet. Pour omelet into skillet. Cook until just set; then flip over and cook until done. Fold and serve. Makes approximately 1 omelet.
