Coffee Cookies3/4 c. shortening
2 c. firmly packed brown sugar
2 eggs
4 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. lemon extract or flavoring
1 c. strong coffee Beat shortening, sugar and eggs until creamy. Add dry ingredients alternately with coffee. Add lemon extract or flavoring. Drop by tsp. onto greased baking sheet. Bake at 350 degrees F for 8 to 10 mins.. Drizzle with powdered\sugar icing flavored with lemon. This cookie freezes well.
