Recipe for cooking Coffee Liqueur Cookies

Coffee Liqueur Cookies

2 eggs
2 tsp. instant coffee crystals
2 Tbsp. coffee flavored liqueur
1 c. butter or butter replacement, softened
3/4 c. packed brown sugar
1 c. sugar
2 1/2 c. flour
1/3 c. unsweetened cocoa powder
1/2 tsp. baking soda
1/4 tsp. salt
2 c. semisweet chocolate chips

Preheat oven to 300 degrees F (150 degrees C).

In a sm. bowl, dissolve instant coffee crystals into the coffee liqueur; set aside.

In a lrg. bowl, cream together the butter, brown sugar and sugar. Gradually add eggs and coffee mixture while mixing.

Sift together the flour, cocoa, baking soda and salt; stir into the creamed mixture. Finally, stir in the chocolate chips.

Drop dough by rounded Tbsp.ful onto a baking sheet. Cookies should be at least 2 in.es apart. Bake for 23 to 25 mins.. Immediately transfer cookies to cooling rack after baking. These keep well at room temperature or refrigerated.

Makes approximately 3 dozen.
