Coffeecake Muffins

1 1/2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
4 Tbsp. (1/2 stick) butter or butter replacement
1/2 c. sugar
1 egg
3/4 c. milk
1/2 tsp. vanilla extract or flavoring

Preheat oven to 400 degrees F.

Mix together dry ingredients. Make a well in the center.

Beat butter, sugar and egg together well. Mix in milk and vanilla extract or flavoring. Pour into well. Stir just to moisten. Spoon part of batter into greased muffin tin 1/3 full. Sprinkle spice mix over top. Top with remaining batter. Filling 2/3 full. Bake for 20 to 25 mins..

Spice Mix
1/2 c. packed brown sugar
2 Tbsp. all-purpose flour
1 tsp. cinnamon

Combine all ingredients, mixing well.

Makes approximately 1 dozen muffins.
