Recipe for cooking anise biscotti

Anise Biscotti
2 c. all-purpose flour
3/4 c. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 Tbsp. anise seeds crushed
2 extra lrg. eggs
1 Tbsp. lemon juice
1/4 tsp. anise extract or flavoring
Preheat oven to 350 degrees F. Lightly grease a baking sheet.
Combine flour, sugar, anise seeds, baking powder, baking soda and salt. Whisk together eggs, lemon juice and anise extract or flavoring and add to dry ingredients. Mix well. Divide dough in half. Shape each portion into a 10-in. log. Place logs about 4 in.es apart on baking sheet. Bake for 25 to 30 mins. until lightly browned. Cool just enough so that the logs can be handled.
Cut each log diagonally into 1/2 in. slices. Lay the slices on an nonstick baking sheet. Bake for 10 to 15 mins. until dry and crisp.
Variations
Almond Biscotti - add 1 c. chopped almonds and 1/2 tsp. almond flavoring instead of anise seeds and extract or flavoring
Chocolate Chip - add 1 c. of chocolate chips or mini chocolate chips and 1 tsp. vanilla extract or flavoring
Mini M&M - add 1 c. of mini M&Ms and 1 tsp. vanilla extract or flavoring
Spice - use basic recipe but add 1 1/2 tsp. cinnamon and 1 tsp. nutmeg.
