Recipe for cooking basic chocolate ice cream base

Basic Chocolate Ice Cream Base2 qt. cream 2 qt. milk 3 lb. sugar Pin. of salt 12 to 16 oz. melted semisweet chocolate 4 c. egg yolks 1/4 c. vanilla extract or flavoring In a lrg. pot over med.-high heat, combine the cream, milk, sugar, salt and chocolate. Temper in the egg yolks (that is, add a little of the hot liquid to the egg yolks to warm them, then slowly add the egg yolks to the hot mixture). Add the vanilla extract or flavoring. Cook until the mixture thickens and coats the back of a spoon. Use immediately, or chill in the refrigerator. Makes approximately 5 qt..
