Recipe for cooking blueberry custard pie

Blueberry Custard Pie

2 c. blueberries
1 (9-in.) baked pie crust, well chilled
1 Tbsp. all-purpose flour
1 c. sugar
1 c. evaporated milk
3 lrg. eggs, lightly beaten
1 tsp. vanilla extract or flavoring

Preheat oven to 425 degrees F.

Place blueberries into pie crust. Set aside.

In a med. bowl, mix flour with sugar; gradually add evaporated milk, stirring until smooth; whisk in eggs and vanilla extract or flavoring until blended. Pour mixture over blueberries. If desired, sprinkle with a dash each of cinnamon and nutmeg. Bake for 15 mins..

Reduce heat to 350 degrees F. Bake for 35 mins. longer. Cool completely before slicing.

Makes approximately 6 servings.
