Recipe for cooking cannoli mousse

Cannoli Mousse1 (15 ounce) container part skim ricotta cheese 3 Tbsp. sugar 1 tsp. vanilla extract or flavoring 1 Tbsp. grated orange rind 1/4 c. golden raisins 1/2 c. mini semisweet chocolate chips 1/3 c. walnuts, finely chopped 1 pt. strawberries, raspberries or blueberries, stemmed 2 Tbsp. orange-flavored liqueur Process ricotta in a food processor until smooth. Add sugar and vanilla extract or flavoring; process to blend. Transfer to med.-size bowl. Stir in orange rind, raisins, chips and walnuts. Cover and refrigerate; or scoop into 6 sm. ramekins or dessert dishes; cover and refrigerate. Qt.er strawberries (leave other berries whole); toss with liqueur in a bowl. Refrigerate for up to 1 hour. Garnish mousse with berries. Makes approximately 6 servings.
