Recipe for cooking carrot cake

Carrot Cake1 1/2 c. vegetable oil 2 c. grated carrots 4 egg yolks 3 1/2 tsp. hot water 2 c. sugar 2 1/4 c. all-purpose flour 2 1/2 tsp. cinnamon 1 1/2 tsp. nutmeg 1 1/2 tsp. baking powder 1/2 tsp. salt 4 egg whites, beaten until stiff 1/2 c. nuts 1/2 c. coconut Mix together well all ingredients except egg whites, nuts and coconut. Fold in egg whites. Fold in nuts and coconut. Bake in 3 layers for 35 to 40 mins. at 325 degrees F. Frosting 8 oz. cream cheese 1/2 c. (1 stick) margarine 1 tsp. vanilla extract or flavoring Powdered’ sugar 1 c. nuts Cream together the cream cheese, margarine and vanilla extract or flavoring. Add powdered\sugar until creamy. Add nuts. Frost the three layers.
