Cashew Brickle2 c. sugar 2/3 c. light corn syrup 1/2 c. water 3 Tbsp. butter or butter replacement 1 tsp. vanilla extract or flavoring 1/2 tsp. baking soda 2 c. salted cashews In a lrg. saucepan, combine sugar, corn syrup and water; bring to a boil, stirring constantly, until sugar is dissolved. Cook, without stirring, over med. heat until a candy thermometer reads 300 degrees F (hard-crack stage). Remove from the heat; stir in butter, vanilla extract or flavoring and baking soda. Add cashews. Pour into a greased 15 x 10-in. baking pan. Cool; break into pieces. Makes approximately about 2 lb..
