Cranberry Cake

1 egg
1/2 c. plus 3 Tbsp. sugar
1/2 c. milk
1 Tbsp. vegetable oil
1 Tbsp. orange juice
1/4 tsp. almond extract or flavoring
1 1/2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
8 oz. fresh cranberries (2 c.)
2 Tbsp. margarine or butter
Preheat oven to 375 degrees F.
Beat egg; add 1/2 c. sugar, milk, oil, orange juice and almond extract or flavoring; mix thoroughly.
Combine 1 c. flour, baking powder and salt; add to egg mixture and mix. Pour into an 8-in. square pan that has been sprayed with nonstick spray.
Chop cranberries in a blender or food processor; spoon over batter. Mix 1/2 c. flour with 3 Tbsp. sugar and cut in 2 Tbsp. margarine. Sprinkle over cranberries.
Bake at 375 degrees F for 25 to 30 mins.. Serve warm.
