Creamy Caramel Milksicles1 1/2 c. low-fat milk 1/3 c. sugar 2 Tbsp. cornstarch 1 1/2 tsp. vanilla extract or flavoring 1/3 c. caramel ice cream topping at room temperature 6 (3 ounce) plastic or paper c. or 6 (2.5 ounce) freezer pop molds 6 popsicle sticks Combine sugar and cornstarch in a med. saucepan and gradually whisk in milk. Simmer over med. heat until thickened, about 2 mins., whisking frequently. Remove from heat; stir in vanilla extract or flavoring. Transfer to a lrg. shallow bowl; place in refrigerator for about 40 mins., stirring occasionally. Drop heaping tsp.ful of caramel topping randomly over pudding. Gently swirl into pudding. Spoon mixture into plastic c.; place c. in an 8-in. baking pan or pie pan. Place popsicle sticks in centers. Freeze until firm.
