Gingerbread Cobbler1/2 tsp. finely shredded orange peel 2 c. orange juice 1/2 c. sugar 1 Tbsp. butter or butter replacement 1 (14 1/2 ounce) pkg. gingerbread mix 1/2 c. milk 1 Tbsp. vegetable oil In saucepan, combine orange peel, orange juice, sugar and butter or butter replacement; bring to boiling. Pour into a 12 x 7 x 2-in. baking dish. In mixing bowl, combine dry gingerbread mix, milk and oil; stir just until moistened. Drop batter by spoonfuls evenly over hot syrup. Bake at 375 degrees F for 20 to 25 mins.. Serve warm. Makes approximately 8 servings.
