Hawaiian Brittle1/2 c. dried banana slices 1/2 c. coconut 1 c. sugar 1/2 c. light corn syrup 1 (3 1/2 ounce) jar macadamia nuts 1 tsp. butter or butter replacement 1 tsp. vanilla extract or flavoring 1 tsp. baking soda Butter a baking sheet. Sprinkle banana slices and coconut in 12-in. circle on buttered baking sheet. In 1 1/2-qt. microwave-safe casserole or 8-c. measuring c., combine sugar and corn syrup. Microwave on HIGH for 4 mins.. Stir in macadamia nuts. Microwave on HIGH for 4 to 6 mins. or until golden brown. Stir in butter and vanilla extract or flavoring; blend well. Microwave on HIGH for I min.. Add baking soda and stir gently until light and foamy. Quickly pour in thin stream over bananas and coconut on baking sheet. Let cool 30 mins.. Break into 30 (2-in.) pieces.
