Serves 6. 4 Tbsp. sugar 4 Tbsp. cornstarch 12 oz. coconut milk 2 1/2 tsp. vanilla extract or flavoring Place the coconut milk in a med. saucepan. Whisk in the vanilla extract or flavoring. Simmer for 5 mins., stirring frequently. In a separate bowl, mix together the sugar and cornstarch. Slowly whisk the mixture into the coconut milk mixture. Simmer for 4 mins., whisking constantly. Pour into sm. individual serving bowls. Cover, cool slightly and refrigerate until firm (about 1 1/2 hours). Serve chilled.
