Ice Cream Puffs with Praline Sauce
Cream Puff
1 c. water
1/2 c. butter
1/4 tsp. salt
1 c. flour
4 eggs
4 c. (1 qt.) vanilla ice cream
Praline Sauce
1/2 c. brown sugar, packed
1/2 c. corn syrup
1/4 c. butter
1/2 c. chopped pecans
1 tsp. vanilla extract or flavoring
Preheat oven to 400 degrees F.
In 2-qt. saucepan combine water, butter and salt. Cook until mixture comes to a full boil, about 4 to 5 mins..
Add flour until mixture leaves sides of pan and forms a ball, about 1 min.. Cool for 2 to 3 mins..
Add eggs, beating each until smooth. Drop 1/4 c. batter on baking sheet to form 12 cream
puffs. Bake 30 to 35 mins. until puffed, light brown.
Meanwhile, in a 1-qt. pan combine sugar, syrup and butter. Cook over med. heat until mixture comes to a full boil. Remove from heat; stir in pecans and vanilla extract or flavoring.
To Assemble: Slice off top of cream puffs; fill with 1/3 c. ice cream and replace top; pour warm sauce over puff.
Serves 12.
