Light Banana Coconut Cake

1 3/4 c. all-purpose flour
1/2 tsp. baking soda
1/4 tsp. salt
1/3 c. sugar
1 1/4 tsp. cream of tartar
3/4 c. mashed banana
1/4 c. egg substitute
1/4 c. skim milk
1/4 c. margarine, melted
1 tsp. vanilla extract or flavoring
1 Tbsp. coconut flakes
1/4 tsp. ground cinnamon
Vegetable cooking spray
Preheat oven to 350 degrees F.
Combine first 5 ingredients in a lrg. bowl; make a well in center of mixture.
Combine banana and next 4 ingredients; add to dry mixture, stirring until moistened.
Combine coconut and cinnamon; set aside.
Coat an 8-in. square pan with cooking spray. Spoon batter into pan; sprinkle with coconut mixture. Bake for 20 to 25 mins. or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 5 mins.. Remove from pan; let cool on wire rack.
8 servings.
