Recipe for cooking mock apple cobbler

Mock Apple Cobbler
Filling
8 c. chopped, seeded, peeled zucchini (about 3 lb.)
2/3 c. lemon juice
1 c. sugar
2 tsp. cinnamon
1 tsp. nutmeg
Crust
4 c. flour
2 c. sugar
1 1/2 c. butter, cold
1 tsp. cinnamon
Preheat oven to 375 degrees F. Grease a 15 x 10 x 1-in. baking pan.
For filling, cook and stir zucchini and lemon juice in lrg. saucepan over med.-low heat for 15 to 20 mins., or until zucchini is tender. Add sugar, cinnamon and nutmeg. Simmer for 1 min.. Remove from heat.
For crust, combine flour and sugar in bowl. Cut in butter until mixture resembles course crumbs. Stir 1/2 c. into filling. Press half of remaining crust mixture into greased pan. Spread filling over top. Crumble remaining crust mixture over top. Sprinkle cinnamon on top. Bake for 35 to 40 mins., or until golden and bubbly.
Serves 12.
