My Better Half Pie

2/3 c. sugar
1/3 c. cornstarch
1/4 tsp. salt
3 c. half-and-half
3 eggs, slightly beaten
1 Tbsp. butter
2 Tbsp. vanilla extract or flavoring
1/2 c. flaked coconut
3 Tbsp. powdered cocoa
3 Tbsp. sugar
2 Tbsp. half-and-half
1 baked 8-in. piecrust
Layer bottom of piecrust with 1/2 c. chopped Macadamia nuts before baking.
In med. saucepan, stir together 2/3 c. sugar, cornstarch, salt, and 3 c. half and half; blend in eggs. Cook over med. heat, stirring constantly, until mixture boils; boil and stir 1 min..
Remove from heat; stir in butter and vanilla extract or flavoring. Pour 1 1/2 c. cream filling into a sm. bowl. Stir in 1/2 c. coconut.
Pour coconut filling into baked pie crust.
Stir together cocoa, 3 Tbsp. sugar and 2 Tbsp. half-and-half; blend into remaining filling in saucepan. return to heat; heat to just boiling, stirring constantly.
Remove from heat; cool slightly. Pour over coconut filling.
Cover with plastic wrap; refrigerate until cold. Just before serving, top with whipped cream and sprinkle with toasted flaked coconut and chocolate curls. Enjoy!
