Recipe for cooking old-fashioned rock cream with strawberries

Old-Fashioned Rock Cream with Strawberries
1 env. unflavored gelatin
1/4 c. cold water
2 eggs, separated
1/3 c. sugar
2 c. milk, divided
2 Tbsp. powdered’ sugar
3/4 tsp. vanilla extract or flavoring
1/4 tsp. almond extract or flavoring
2 c. fresh strawberries, sliced
Sprinkle gelatin over cold water in a med. saucepan; let mixture stand 1 min.. Beat egg yolks well; add yolks, sugar and 1 c. of the milk to gelatin mixture, stirring until blended. Cook over low heat until mixture is hot (do not boil). Stir in remaining 1 c. milk and cook until mixture begins to simmer. Simmer 1 min., stirring constantly; cool. Chill until the consistency of unbeaten egg white.
Beat egg whites (at room temperature) at high speed of an electric mixer until foamy. Gradually add powdered\sugar, beating until soft peaks form. Fold egg whites and flavorings into yolk mixture. Spoon into a lightly greased 4-c. mold. Cover mixture and let chill. Unmold onto a serving platter; arrange strawberries around mold.
Makes approximately 8 servings.
