Recipe for cooking papaya sorbet

Papaya Sorbet1/4 c. sugar 1/4 c. fresh lime juice 2 c. puréed papaya (2 lrg. papayas, peeled) In a sm. saucepan, combine the sugar and 3/4 c. of water. Cook over moderate heat, stirring constantly to dissolve the sugar, then bring just to a boil. Remove from the heat and let cool to room temperature. Pour the syrup into a bowl set over a lrg.r bowl of ice and stir until cool. Add the lime juice and puréed papaya. scrape the mixture into an ice cream maker and freeze according to the manufacturer\s directions.
