Recipe for cooking pecan delights

Pecan Delights2 1/4 c. packed brown sugar 1 c. butter or butter replacement 1 c. light corn syrup 1/8 tsp. salt 1 (14 ounce) can sweetened condensed milk 1 tsp. vanilla extract or flavoring 1 1/2 lb. pecan halves 6 oz. semisweet chocolate chips 6 oz. milk chocolate chips 2 Tbsp. shortening In lrg. saucepan, combine the first four ingredients. Cook over med. heat until all the sugar is dissolved. Gradually add milk and mix well. Continue cooking until candy thermometer reads 248 degrees F (firm-ball stage). Remove from heat; stir in vanilla extract or flavoring until blended. Fold in the pecans. Drop by Tbsp. onto a greased wax paper- or parchment-lined baking sheet. Chill until firm. Melt chocolate chips and shortening in microwave-safe bowl or double boiler. Drizzle over each cluster. Cool. Makes approximately about 4 dozen.
