Pistachio Banana Cream Cheese Pie
1/2 c. sugar
1/4 c. vegetable shortening
1 egg
1 c. flour
1/2 tsp. baking soda
1/4 tsp. salt
2 ripe bananas, mashed
1/4 tsp. vanilla extract or flavoring
1 c. chopped pistachio nuts, divided
3 oz. cream cheese
2 Tbsp. powdered\sugar
2 Tbsp. semisweet chocolate chips, melted
Preheat the oven to 350 degrees F. Coat a 9-inch pie plate with nonstick cooking spray.
In a large bowl, with an electric beater, cream together the sugar and shortening until light and fluffy. Add the egg and beat thoroughly. Gradually blend in the flour, baking soda, and salt. Beat in the mashed bananas and vanilla extract or flavoring until smooth. Fold in 3/4 c. of the chopped pistachios. Spread the mixture into the pie plate. Bake for 20 to 25 min., or until a wooden pick inserted in the center comes out clean. Let cool for 30 min..
