Recipe for cooking watermelon sherbet

Watermelon Sherbet

4 cusp diced seeded watermelon
1/2 c. sugar
3 Tbsp. lemon juice
1 env. unflavored gelatin
1/4 c. cold water
1 c. skim milk

Combine watermelon, sugar and lemon juice; refrigerate 30 mins..

Spoon half of mixture into blender container; process until smooth. Repeat with remaining watermelon mixture.

Combine gelatin and cold water in a sm. saucepan; cook over low heat, stirring constantly, until gelatin is dissolved. Gradually add dissolved gelatin to watermelon mixture, stirring well. Add milk and pour into freezer can of a 1 gallon electric freezer. Freeze according to directions.

Makes approximately 1 qt., about 82 calories per 1/2 c. serving.
