Bourbon Carrot Cake with Bourbon Glaze
2/3 c. vegetable oil
1 c. sugar
2 eggs
1 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
3 Tbsp. Bourbon
1 1/2 c. grated carrots
1 c. chopped pecans
Preheat oven to 325 degrees F. Grease and flour a 9-in. square cake pan.
Beat oil and sugar together until well mixed.
Beat eggs into the oil/sugar mixture.
Stir in flour, baking powder, baking soda, ,salt, cinnamon and nutmeg.
Add Bourbon, carrots and pecans. Mix well.
Pour into prepared cake pan. Bake for 40 mins.. Cool in pan.
Spread Bourbon Glaze over cooled cake.
Bourbon Glaze
1 c. powdered\sugar
2 Tbsp. hot water
1 Tbsp. Bourbon
Blend together.
