Canadian Rum Cake
1 lb. dates, pitted and chopped
1 lb. walnuts, chopped
3/4 c. butter, room temperature
1 1/2 c. firmly packed light brown sugar
1 tsp. baking soda
1 c. boiling water
3 eggs, well beaten
2 1/4 c. sifted flour
3/4 tsp. salt
2 Tbsp. rum
Rum glaze (optional)
Preheat oven to 300 degrees F. Grease a 13 x 9 x 1-in. baking pan.
Cream butter and sugar until well blended. Add dates and nuts.
Mix baking soda with water and pour over nut/date mixture. Add eggs. Stir in the flour and salt, beating until smooth. Add the rum and blend well. Pour into greased pan and bake for 1 to 1 1/4 hours. Test to make sure cake is done. Cool in the pan on a wire rack for 10 mins. then remove from the pan. Frost with Rum Glaze.
Makes approximately 10-12 servings.
Rum Glaze
Mix 3/4 c. powdered\sugar with 1 Tbsp. rum or as much rum as needed to make the glaze just thin enough to pour.
